Just 35km from Troyes, we invite you to visit this authentic and prestigious setting and to enjoy tasting Devaux Champagnes. In the heart of the Champagne region of the Côte des Bar, in Bar-sur-Seine, Champagne Devaux is a 'boutique' premium brand.

Drop-by unannounced and learn about the Champagne Appellation and the Champagne making process, followed by a tasting (free for groups of 5 & under) all from within the beautiful, historic surrounding of 17th and 18th sites.

The Collection D, composed of the champagnes Cuvée D, Ultra D, D Rosé and D Millésimé, is our prestigious range of champagnes, reknown as the best cuvées of its category and aged 5 years at least. Taste also our Classiques champagnes aged 3 years at least (twice longer than the regulation imposes), composed of Grande Réserve, Cuvée Rosée, Millésimé, Blanc de Noirs and Crème de  Cuvée and still wines such as Rosé des Riceys.

History

Champagne Devaux has been part of the legendary history of Champagne since the 19th century.
Founded in 1846 by brothers Jules and Auguste Devaux, the house was then managed by three inspiring women who led the family winery with remarkable energy and talent in equal measure.
The first woman, Claude-Joseph Devaux (born Ducray), widowed at 39 years old, founded and managed the house “Maison Vve A. Devaux″ in 1846 in Epernay with her son François-Auguste. His wife, Augusta-Maria Herbin, was to become the second “Devaux widow″ following his death in 1879. She was in charge of the winery until 1895. The DEVAUX brand quickly became successful.
By the turn of the century, DEVAUX was exporting 75% of its production, notably to English-speaking countries, as well as Germany and Russia. Then in 1907, following the death of Charles-Auguste Devaux, the third “Devaux widow” born Hussenot, takes over the reins and manages the winery until her death in 1951 at the age of 80, thus concluding an extraordinary saga of “Champagne widows″. She is succeeded by her two sons.
The last in the Devaux line, Jean-Pol Auguste Devaux, was without an heir. As such, in 1987 he entrusted the future of Devaux – a brand with a prestigious past and an exciting future – to Laurent Gillet, President of the “Union Auboise”* (then supplier for the DEVAUX “Blanc de Noirs” cuvée).

Vineyard & Terroir

In the Champagne appellation, in the Côte-des-Bar, in the Aube department, 35 minutes from Troyes.

For years, the house was located on the Avenue de Champagne in Epernay, but today home is an 18th century Manoir on the banks of the river Seine, complete with a rare and “listed” 17th century dovecote. This historic venue, is wholly dedicated to welcoming guests, clients and friends of the brand. While the exterior of the building is a beautiful example of period architecture, the interior – contemporary, unique, clean-lines – conveys both authenticity and prestige, two important characteristics at the heart of the DEVAUX brand and its champagnes.

The Côte-des-Bar is situated in the south of the Champagne appellation (between Bar-sur-Seine and Bar-sur-Aube). This renowned vineyard area represents a quarter of the total Champagne production. The stunning rolling landscape belies soils and unique exposures ideal for Pinot noir, one of the key Champagne grape varieties.

Winemaking & Aging

A great Champagne is, before anything else, about its terroir, people and grapes. All year long, our partner-growers give their best to obtain the highest quality grapes at harvest. At DEVAUX, in order to perfect our work in the vineyards, we formulated – with the help of our vineyard managers – a new and unique approach to viticulture, a key considerati on in our long-term vision. This approach requires each grower to voluntarily follow a strict set of rules that go over-and-above the (already demanding) requirements set by the Appellation system.

Thus, much of the quality in all DEVAUX Champagnes is in large part thanks to these strict rules: ▪ parcel selection (for the Collection D range), ▪ sustainable vineyard management, ▪ technical support and follow-up at each key stage of the season, ▪ pressing as close to the vineyard as possible.

This quality approach applies also in the cellar, where the following principles are observed: ▪ ageing of reserve wines (wines from previous harvests) in predominantly oak vats, ▪ use of only first press wines (the “cuvée”) in the blend for the Classic and “coeur de cuvée” for the Collecti on D , ▪ extended ageing in the bottle following the “prise de mousse”.

At The Winery

The addition of a small quantity of Pinot Noir vinifiedin red and rosé, before the fermentation called « prisede mousse » gives softness and roundness to this champagne. A rich and elegant fruit driven rosé. Pale salmon colour. A first nose of soft and ripedraspberries followed by lightly mentholated notes. A lovely fresh and smooth mousse with a good balance and violet notes on the finish. Key aromas: freshness, fruitness, softness.

The nose is pure indulgence: vanilla, brioche, warm bread, praline... but also lemon, zest and candied. On the palate, it is fresh and refined, with the body and intensity that is typical of the 2009 vintage. Lemon, bergamot, citrus zest and toast balance with beautiful tension. The finish is long, with chocolate notes. Sténopé 2009 is the perfect blend of generosity, ripeness and freshness. It is the "blessed" vintage
