About us

We are a family business on the production of DOC wines of the Dão region. The passion for the wine Dão is what has been leading us and we develop our work combining traditional methods with innovative and differentiating strategies, in perfect symbiosis. Producing top quality wines is our primary objective. Therefore, we devote ourselves to this mission with all our heart and soul, in a hard labor that begins in the vineyard, undergoes the cellar and culminates in the nectar we want the World to discover and enjoy. 

History

Soito Wines, created in 2013, is one of Dão’s youngest and most promising projects. At Quinta do Soito, with an already long wine tradition, two teachers gave wings to the dream of transforming the family farm into a reference producer, with wines of exceptional quality.

Vineyard & Terroir

Surrounded by the mountain chains of Caramulo, Buçaco, Montemuro and Estrela, our region, - the Dão region - is totally protected from cold winds, summer rain clouds from the Atlantic, and even continental storms. Within its mountain walls, the region is full of contrasts: warmer in the west, cooler in the north and east, gently rolling hills, deep valleys, forests and mountain slopes; damp, cold winters; and summers that are generally sunny, warm and dry. Yet in late summer, the days become rapidly cooler, allowing for long, slow ripening and the development of complex flavours.

The vineyards lie high in the hills, at 400 and 600m, on decomposed schist or granite. They are also carefully sited with a very good exposure to the sun to ensure perfect ripeness, which gives the wines an innate balance of lovely, bright, mineral acidity, wonderful fragrance, character and intensity.


Winemaking & Aging

The grapes are harvested by hand into small 20kg boxes to avoid overheating and / or crushing. They are meticulously evaluated on a sorting table, transported to the destemmer / crusher and, by gravity, end up in refrigerated fermentation tanks where they remain for 7 to 9 days. Reassembly and temperature control are carried out manually and also automatically, thanks to the existing technology.

After being properly selected by the winemaker, the wine is stored in French oak barrels from some of the most respected cooperage brands in the world – Taransaud, L’Adour, Seguin Moreau, Baron.. At this stage, the wine “breathes” through the imperceptible cervices of the staves and develops admirable, rich and complex aromas. The temperature of the winery, and the ideal time of permanence – which ranges from 6 to 24 months – are carefully monitored, with a view to a perfect balance of aromas and complexity that we intend to achieve in our wines.

At The Winery

Built from scratch and taking advantage of the slope of the ground so that gravity becomes an essential part in winemaking process, the winery Soito Wines has the ideal conditions for creating the best quality wines. It is here that the wines of both “Quintas” are produced, combining traditional methods with distinctive and innovative strategy that is based on the latest technology. In the winery you can visit the showroom, the fermenting room, the storage and the noble room, that is, the oak barrels room.
