Naturally sweet wine made from pedro ximenez grapes that have been turned into sun-dried raisins using traditional methods which produce the concentration and transformations necessary to achieve the characteristics of this kind of wine. Geographic information: Almargen, north Málaga mountain ranges at an altitude of 520 metres. Despite being just 90 km away from the Costa del Sol the climate is generally continental. The winters are cold, which benefits vine dormancy and hot summers which benefit fruit ripening resulting in high quality, healthy grapes. The land is of the sandy loam soil type with gravelly texture. Harvest: The grape is selected from the vine, manually collected and placed in individual crates of 10-12 kg. Vinification: The grapes are turned into raisins using the traditional method, they are sun dried until the necessary traits have appeared. Partial cold fermentation in stainless steel tanks. Appearance: Mahogany coloured with hints of amber. Clean and brilliant. This wine lazily coats the glass displaying the usual tears of a good PX. Aroma: The intense aroma of raisins and dried figs loudly stating its origin. However, this wine also offers caramel and light flashes of hazelnut and walnut aromas. Flavour: Intensely sweet in mouth accompanied by pleasant roasted coffee aromas. Smooth and syrupy with an intensely persistent aftertaste. Gastronomic pairing: Excellent wine as a dessert or as an ingredient in many dishes. Serve chilled between 6º and 8ºC
