Winemaker Comments

A lively young red wine of Tempranillo grapes (100%) from our Finca El Conuco. The cultivation of the soil and the vines is always made when the moon is located in front of fire constellations (Leo, Aries, Sagittarius), as well as the careful hand picking of ripe grapes. Following a two-week maceration and fermentation of the grapes, with their own natural yeast, the wine goes into our earthenware amphoras (Tinajas). There is done the malo-lactic fermentation and a resting phase on its own sediment, for tow months. The result is a young wine of great personality and multifaceted character whose power is dressed in softness. The effects of fire-constellations have intensified its fruit bouquet. The waiver of additional culture yeast gives this Tempranillo the unique character of the county, which produced it. So he bears his name, Pagos del Conuco.
