The “maceratión carbonique” is less known from Spain, but with this technique, we have elaborated one of our most brilliant wines. The work in the vineyard and cellar is always done when the moon was in front of a water constellation (Scorpio, Cancer or Pisces). The grapes of the Syrah variety are picked by hand in the early. After that we do another selection, because for this special maceration method we must use healthy and totally intact bunches. The grapes are not pressed, the natural fermentation starts inside the berries. The result is an immense fruity, expressive and (although without barrel ageing) surprising soft wine. Tags for tasting: - Intense red violet colour - In the nose you can find high concentrated aromas of wild berries - In the mouth the wine shows its full complexity, intense fruit, supple tannins and a wonderful balanced sweet-acid finish - A little bit chilled a delectation with veal, chicken, fruits and a lot of desserts - Serve at: 12ºC – 15ºC - 13,5%vol; 5,1g/l Acidity
