- Sight: Red ruby color, medium-low layer, with remains of carbonic gas clearly visible which has been formed endogenously as a result of the contact of the grape juice with the “madre” (gripping, squeezed grape). - Nose: Intense aromas of fine yeast mixed with hints of fruit which will grow with the pass of the time. - Mouth: Wide and crackling, with a finish reminiscent of bitter almonds. - Wine-pairing: The Sobremadre wine has a wide variety for pairing because of its making. Appetizers, cheeses, salads, blue fish and rice are optimal; to these meat and stews can be added.
